Last Time We Asked: Is it ok to freeze cheese so that it will keep longer?

Answer: Generally speaking, cheeses should not be frozen, especially the softer varieties. Rancid flavors can develop when cheeses are frozen and their textures can suffer as well. Besides losing moisture, the fats can be destabilized, especially in the younger cheeses. Sheep milk cheeses seem to suffer less than goat or cow cheeses, yet they can also develop off-flavors.

Usually the normal range of temperatures in a home refrigerator is cold enough to keep a cheese for extended periods though again, the softer varieties are most vulnerable. Because freezing cheese is to be avoided it is one more reason why we recommend buying cheeses often and not buying to try to stock up for extended periods.
